This is my own recipe:
3-4 chicken breasts, 1-2 cans of coconut milk, 2T curry powder, diced butternut squash, (mango is also good!). Put in crock pot on high for about 3-4 hours. After cooked cut chicken up before serving.
Meal 1 – Repeat of day 8
Meal 2 – Tuna Salad boats with cashews, carrots and apple slices
Meal 3 – Bacon wrapped spiced pork tenderloin with roasted broccoli, baked potato and avocado (emeals)
Meal 1 – Repeat of days 8 & 9
Meal 2 – Chicken zucchini poppers with avocado, salsa and leftover broccolli (not pictures)
Meal 3 – Stuffed Peppers (pork and cauli rice) with roasted brussel sprouts (emeals)
Meal 1 – Steakum with Brussels sprouts and fried eggs
Meal 2 – reapeat of day 10
Meal 3 – Pork chops with apples and potato/turnip mash (emeals)
Meal 1 – Leftovers of pork chop and brussels sporuts with avocado and eggs
Meal 2 – I found compliant lunch meat! yeah! Turkey rolls with carrots, deviled eggs and apple slices with almond butter
Meal 3 – Turkey meatball soup with zoodles and a spinach/apple/almond salad (I also added avocado to the soup) (emeals)
Meal 1 – The last of the stuffed peppers with fried eggs and some raspberries with coconut shreds and a tad of almond butter
Meal 2 – turkey roll ups with deviled eggs and carrots with Tessame’s Ranch
Meal 3 – crock pot roast with potatoes and carrots and avocado, I also added an apple with almond buuter.
This was a good week, I feel like my fats were more balanced (less nuts), but this is about the time I start to get bored! I’m on the downhill now, 50% done with round two… though I was thinking of extending this round to 40 days (I wanted to do 90 days straight, but it’s our anniversary next month and we are going to a bed and breakfast and wanted to be able to enjoy it). I will re-evaluate after these next 15 days and decide if I want to keep going, stay tuned!
