You can read my Round 1 synopsis HERE (why I did it, what I thought and more about the program).
I decided to do a round 2 for 2 reasons:
1. to support my parents and aunts who are starting a round 1
2. to further curb my sugar cravings (that sugar dragon is fierce!) I stayed mostly Paleo after my last Whole30, but even paleo sweets were a weakness for me! It fed my sugar dragon and then I caved with non paleo sweets a few times too. (but I’d say I was still 90% paleo). However sugar does not do well for my mood.
Here is my week 1 meals:
R2D1
Meal 1 (Breakfast) – Chicken sausge with kale and cashews, fried eggs
Meal 2 (Lunch) – Leftovers (though I don’t recall what exactly, no pic)
Meal 3 (Dinner) – Roasted chicken with carrot and potato and rainbow salad with a homemade dressing (emeals)
R2D2 (not from Star Wars! lol)
Meal 1 – Leftover potato/carrot hash with chicken sausage, guac and fried eggs
Meal 2 – Leftovers
Meal 3 – Chicken Curry Soup (emeals)
R2D3
Meal 1 – Butternut squash, kale, cashews and chicken sausage with fried eggs
Meal 2 – leftovers
Meal 3 – Paleo Veggie Chili with guac
R2D4
Meal 1 – leftover chili with an egg, half a banana with almond butter and cinnamon
Meal 2 – Chicken salad with lettuce wraps and applesauce
Meal 3 – Spiced Tilapia, cauliflower/turnip grits, asparagus with mushroom and cashews
R2D5
Meal 1 – Leftover ‘grits’ with chicken sausage and fried eggs (I realized later I forgot my fat on this one!)
Meal 2 –Had to shop at Costco today, and realized last minute there was nothing I could eat at the food court (already promised the kids!). So I made 2 tuna salad boats, a go-go applesauce, almonds and hint water for a quick on the go lunch!
Meal 3 – Lemon Garlic Wings with roasted sweet potato chunks (emeals) and a spinach salad with almonds and lemon garlic dressing (Tessame’s)
R2D6
Meal 1 –Butternut squash, baby spinach, prosciutto and coconut milk with fried eggs.
Meal 2 – On the go – Five Guys Burger Bowl with lettuce, tomato, pickles, mushrooms and mustard. Unfortunately no Avocado :/ I just found out that their mushrooms actually have High Fructose Corn Syrup in them BOO! Why?? I don’t know! So no mushrooms allowed! Here is their allergy info, basically every other veggie is a go (except for relish, and mushrooms!) I thought the onions were cooked in peanut oil, but this list says they are not.
Meal 3 – Porkchops with chunky applesauce, roasted broccoli and masked sweet potatoes and avocado
R2D7
Meal 1 – Mashed sweet potatoes, chicken sausage, zucchini, green pepper, white potato, fried eggs, avocado
Meal 2 – packed for the road, I had some raw veggies with Tessame’s Ranch and chicken sausage
Meal 3 – OMGPaleo spaghetti bake with zucchini and baby spinach added, and avocado
Looking back over the week, I probably ate too many nuts….but I was really sick of avocado and I don’t like olives :/ I’ll be doing more avocado this next week and less nuts.
