White Enchilada Bake (in the microwave)


I love my Deep Covered Baker from Pampered Chef, and am always looking for new ways to use it!  I try to use my crock pot and microwave as much as possible to keep it cooler in the house (as I’ve previously mentioned).  I’ve seen this yummy white enchilada recipe floating around pinterest, so I came up with my own microwave version!
First I cooked the chicken breast in the slow cooker (or you could have some already made chicken in your freezer). 
What you need -
Shredded Chicken (about 2 cups)
1 can cream of soup
1/2c sour cream
1T taco seasoning
1 can diced chilies
Corn tortillas, about 12
Shredded Monterey Jack Cheese, divided

Instructions -
To the shredded chicken add  a can of cream of soup, 1/2 c of sour cream, 1 T taco seasoning (I make my own, the recipe is here), some Monterey Jack Cheese and a can of diced chilies.

Then start to layer it in the deep covered baker…start with corn tortillas, then about 1/3 of the chicken mix, more corn tortillas, more mix, you get the idea…
Top with Monterey Jack Cheese
Put the lid on, place in the microwave for about 10-15mins.

This recipe could easily be done in the oven as well, bake at 350 till heated through, probably about 30min.
